Urda cheese : ウィキペディア英語版
Urdă

Urdă〔(【引用サイトリンク】title=Definition of urdă )〕 ((:ˈurdə), (マケドニア語:урда, urda), (ブルガリア語:урда, извара), (セルビア語:вурда, vurda), (ウクライナ語:вурда), (ハンガリー語:orda, zsendice)) is a sort of whey cheese common in the Balkans, variously claimed to be Romanian, Serbian,〔(Tehnologija hrane (Serbian) )〕 Macedonian〔(About the Macedonian gastronomy (Macedonian) )〕 and Hungarian.〔(Zsendice vagy orda (Hungarian) )〕 It is made from whey of sheep, goat or cow milk. Urdă is produced by heating the whey resulting from the draining of any type of cheese. It is often made into molds to the shape of a half sphere. The paste is finely grained, silky and palatable. It contains 18 grams of protein per 100 grams.
Some Romanian sources claim urda to be a traditional Romanian dairy product.〔(【引用サイトリンク】title=site officiel de la Directia pentru Agricultura si Dezvoltare Rurala Sibiu )〕 In Romania, it is used especially in the preparation of several desserts as clătită and plăcintă. Urda is also traditionally prepared in Serbia, notably in the southern region of Pirot,〔:sr:Вурда〕 Macedonia〔(Urda - super food for the health and beauty ) (Macedonian)〕 and Hungary.
Urdă is similar to Ricotta in the way it is produced.
